Whats For Breakfast?

For the last 4 weeks Larry and I have been testing a Vegetarian/Vegan lifestyle. We are doing this for health reasons, hoping to be blessed with better health.  Larry's favorite meal of the day is breakfast (he will eat it and ask for it for every meal).  So, What's For Breakfast?......SCRAMBLED TOFU!  He LOVES it! 

Even though I am a accomplished cook, I was very leery of what to do with tofu.  I had no idea of what to do with it.  I stumbled onto a PBS cooking show, Christina Cooks, and have been recording them everyday and watching them and studying them on my days off of work.  Her website is  My new favorite cooking show.

We have already seen results in our new way of eating.  Larry has lost close to 30 pounds and I am only 2 pounds away from my goal weight.  Also Larry is feeling much better.

In a few weeks I hope to be able to say that "I am a accomplished Vegan cook!

  1. Tofu is super easy once you get the hang of it. I am SO proud of you guys, and ecstatic for Uncle Lar, I know he can do it! Here is one way I like tofu. Cut up a block into bite sized chunks, and sautee with onion and red pepper in a little olive oil. Add some vegan chicken seasoning and a little water so it makes a nice savory sauce. Make sure the tofu gets a little browned so it's not too smooshy. Serve over rice. Super yummy and very easy. Good luck!!
